41. Scottish chicken and leek soup

This traditional Scottish soup is a meal in itself, with the rice providing just enough bulk to fill you up. It’s a brilliant way to use up leftovers from a roast chicken – the bones infuse the broth with plenty of flavor, while the meat is added towards the end, so that it stays tender. Prunes meanwhile provide a lovely subtle sweetness and the soup tastes fantastic served with a generous sprinkling of chopped parsley.

40. Curried cauliflower soup

Cauli soup but not quite as you know it. Rich and silky thanks to coconut and cream cheese and with a hint of heat from the green chilies, as well as plenty of warmth courtesy of some curry powder, this soup feels properly indulgent but is actually surprisingly low in carbs. Served topped with dried onion flakes, cilantro, chili and lime zest, it’s also a bit of a taste sensation.

39. Cucumber and yogurt gazpacho soup

While gazpacho might typically be made with tomatoes, this cucumber and avocado version offers a seriously tasty twist on a classic. The yogurt thickens the soup and, along with the avocado, makes it wonderfully creamy, while the cucumber and mint keep things refreshing. It also only takes 15 minutes to make (no cooking required) – if you’re not preparing it in advance, chill the soup in the freezer for 10 minutes or so before serving.

38. Roast pumpkin soup with blue cheese

This fragrant, Spanish-inspired soup combines pumpkin with aromatic garlic and rosemary. The addition of extra virgin olive oil gives it a silky-smooth texture, while a sprinkling of blue cheese provides a salty tangy that works brilliantly with the sweetness of the pumpkin. Serve with hunks of bread on the side for a filling meal.

There’s something to be said for keeping things simple when it comes to soup, and this flavorsome number is a case in point. It's cheap to make, full of fresh flavors and healthy, too. Carrots and potatoes are cooked in stock, seasoned with paprika, then blended until smooth. A generous dot of butter, squeeze of lemon, and a sprinkling of grated Parmesan takes it to the next level.

30. Bacon and bean broth

A riff on traditional Tuscan bean soup, this warming broth matches both haricot and cannellini beans with salty bacon lardons. Brimming with color, texture and flavor, it’s as comforting as it is nutritious. If you’re looking for a quick and easy meal that still feels like you’ve made an effort, then this delicious Thai-inspired dish is it (to add to the appeal, it’s a complete meal in a bowl and doesn’t generate lots of washing up). It’s also very versatile; you can add more stock or water to make it ‘soupier’ and swap the chicken breast meat for leftover roast chicken or pork, or even use tofu instead. Happily, the sweetness of the soup really appeals to children and the broccoli adds a lovely hit of freshness and crunch (not to mention plenty of goodness).
